Legend has it that the Liege waffle with pearl sugar dates back to the 18th century. The Prince-Bishop of Liège is believed to have asked his cook to prepare a sweet, tasty dessert. The cook then experimented with a recipe combining a brioche dough and little pieces of sugar. Seduced by the delicious aroma coming out of the kitchen, the Prince-Bishop fell under its spell! He wasn't alone and the waffle became very popular in the Liège region and throughout Belgium.
The French Revolution and the battles of Napoleon Bonaparte paralysed the European sugar cane trade in the early 1880s. In the quest to find sugar cane substitutes, it was discovered that sugar could be extracted from a garden product: sugar beet.
Pearl sugar is a specific state of beet sugar obtained by compressing refined sugar, and it is both concentrated and resistant to heat. The sugar pearls do not melt completely, giving our waffles a sweet and crunchy texture.
